Purple Sweet Potato Chiffon Cake


I wish I could tell you that I baked the Eeyore cake above. But no, it was Susanne, aka the most creative chiffon baker in the world who creates characters using purely chiffon cake and natural colouring (Check out her instafeed @susanne.decochiffon)!

I was lucky to have won a packet of purple sweet potato powder from her giveaway last year - she surprised me by sending another 3 flavourings: orange sweet potato, black sesame, and soy bean powder! Thanks Susanne - now I just need to find the time to bake again.

What I can tell you is that I baked the cake below:

Isn't that colour divine? Such a delicious and striking contrast to the cake's outer layer! I was reminded that purple was my favourite colour when I was schooling.

Susanne's recipe for Eeyore is here. I wasn't so adventurous so I used Domestic Goddess' recipe for my first try. I won't be describing my steps in detail as I followed exactly what Domestic Goddess did for her cake - do refer to her link if you want to know the exact steps.

Ingredients:

For 18cm tube pan

Egg yolk mixture:

4 egg yolks

93g cake flour, sifted

2 1/2 tablespoons corn flour, sifted

1/4 teaspoon baking powder, sifted

53g caster sugar

80ml milk

1/4 teaspoon lemon juice

133g sweet potato, mashed

80g sweet potato, cubed

67ml corn oil

Egg white mixture:

4 egg whites

1/2 teaspoon cream of tartar

60g caster sugar

After peeling and cubing the purple sweet potato (thanks Mum!), I boiled them and set them aside to cool.

The egg yolk mixture turned a nice purple after I added the powder! And look at the lovely purple and white swirls when I folded the meringue and egg yolk mixture together. Next, I scattered the purple sweet potato cubes all over the batter and popped the cake in the oven.

There were mixed reactions to the cake. Some liked it, but some thought it was weird to have a 'savoury' flavour for cake. One of my friends said she can't decide if she likes it or not.

I loved it because I like sweet potato and anything to assuage my guilt about cake, I'll take it :) This probably falls into the same category as my Black Sesame Chiffon.
