Banana Chiffon Cake


Raise your hands if you love banana cake!

Some of the best I've tried in Singapore are at Bollywood Veggies (cheapest) and The Plain (at Craig Road). I can't remember any other that left a good impression. Of course, the best is from Hiap Joo Bakery in JB. But is it? ;)

The only chiffon flavours you find outside are pandan and orange. Why isn't anyone selling banana chiffon? And every other flavour you can think of (that are currently written on a secret page in my recipe book for future development!)?

I found a recipe from Kitchen Tigress, tried it, and got feedback from tasters: This has a stronger banana flavour than the one from Hiap Joo, yet is softer and more moist at the same time! In fact the cake was so moist that it couldn't hold up when cut - the sides were squished down together with the knife.

For my second try to fulfil an order from Mrs Lum (my form teacher in primary 5), I modified the recipe a little by adding more flour to make it more crumbly. The smell from the oven was absolutely heavenly :D If only I could have some too!

I delivered it to her today. Her feedback: "Surprisingly very yummy!! Never eaten banana chiffon cake before. Love it!! :) Thumbs up"
