Roses & Rosettes

I learnt 3D Floral Piping at My Sister Bakes! They make the most gorgeous cakes I've ever seen - and these are not made from fondant. They're swiss meringue buttercream, so they're less sweet and more palatable (:
We had some time to practise the 3D rose piping on our own.

My initial attempts (above) were quite sloppy. It's harder at the beginning to get the core of the rose to stand firm and support the petals I was piping around it!

It got better after a while (:

There is a whole lot of technicalities to making the swiss meringue just right and in frosting the cake with the beautiful shading effect smoothly. Besides the 3D roses (in cyan), we also learnt to pipe rosettes (in pink), leaves, and buds!

Look at this gorgeous cake. I couldn't have done this without the help of Esther, our instructor! She gave a lot of detailed instructions and corrected us when we weren't doing it right. She apparently has a bowl of practice cream that she uses to practise her rose piping everyday. Amazing.

The chocolate cake was so good too, the texture was not too dense and not too sweet. I'll buy their cakes anytime!
The whole class took 5 hours - and this was with the extra help of assistants with washing and cleaning the tools. I wonder if I'll ever dare to try this on my own at home with no help! But it was a day well-spent (:
