Blueberry Banana Cake

I LOVE banana cakes, and I could pop blueberries into my mouth all day long. So I jumped at the chance to bake this!
Every mouth of this moist banana blueberry cake gives a burst of richness without being overly sweet. You know you want it.

In his words: "Response is [4 thumbs up]. Older people liked it cos it wasn't too sweet and they liked the fruits. My sis liked it but she said some berries were sweeter [than the rest]. My sis bf loved it and cut a damn huge slice. She thought it could be fluffier like let it raise more."
I tried another variation with added chocolate chips, with help from my colleagues Jamie and Shermaine, just to use up the leftovers I had at home. It turned out so good, I might try doing a banana chocolate variation without the blueberries in future!
Recipe adapted from Laura Vitale
Ingredients:
2 cups all purpose flour
1 tsp baking powder
1tsp baking soda
1 tsp salt
1 cup of fresh blueberries
1 stick of unsalted butter, room temperature
3/4 cup granulated sugar
2 eggs
Zest of 1 orange
1/4 cup milk
1/2 tsp vanilla extract
3 or 4 very ripe mid-sized bananas, lightly mashed
Method:
1. Preheat oven to 176 deg Celsius / 350 deg Fahrenheit. Grease a 9 x 5 inch loaf pan and set aside.
2. Mix the flour, baking soda, baking powder, and salt in a big bowl. Use a separate big bowl to toss the blueberries with 1/2 of the flour mixture. Set aside.
3. Cream the butter and sugar together with an electric mixer until well incorporated. Add eggs & orange zest and mix well. Add mashed bananas & vanilla extract and mix well.
4. Add flour mixture in while adding milk. Do it in batches, not all at once (you don't want lumpy batter), mixing well after each batch until the batter is smooth.
5. Add blueberry mixture. Mix long enough to incorporate into a smooth batter but make sure blueberries don't burst.
6. Pour batter into loaf pan and bake for 1 hour or until fully baked (ie. cake tester comes out clean). Serve while hot - that's when you can taste the glorious oozing burst blueberries, or melted chocolate :)
